foodforliving-webChristine Scalfo-Glover, founder of Food For Living in Vineland, teaches heart-healthy cooking to onlookers at St. Isidore the Farmer Parish, Vineland, on Tuesday, July 13. Promoting a diet that emphasizes whole grains, beans and legumes, nuts and seeds, and fruits and vegetables, Scalfo-Glover showed participants how to make quinoa salad, herbed seitan with leeks and mushrooms, asparagus with sweet mustard dressing, and chocolate walnut banana bites. Sister Catherine Kane, pastoral associate, said the parish hosted a cooking demonstration because its summer Oasis program, now in its 13th year, is based on the concept that “grace builds on nature.” The summer program included a presentation on the environment, annulment workshop and book group, in addition to a three-part series on prayer and an evening on men’s spirituality. “By these means, participants can find renewal for body, mind and spirit during this summer season of relaxation and growth.” she said.
